My BEST Briskets are smoked at 350-375. 17 lbs. boys in about 5 hours. Always moist, tender and full of flavor!!!!!!!!!
It may not be the right way. It's just the way I do it and they are MUCH better than Low and Slow.

You can go Too Low.
I like to cook at 250-270 in my drums.
You get direct heat and convection heat in the drum and it seems to cook best at this temp. range. I have a "guru" style controller so I can dial in just about any temp I want.
I just think the 250-270 range does the best for me. |
