Been a lurker for a couple months now and just decided to be a little more active in the forums. Made the plunge into the world of true smokers with a purchase of a Tejas 2430 Smoker: http://www.tejassmokers.com/products/2430det.htm Should be delivered on Monday with seasoning to begin Tuesday. Just in time for the fourth |

| Thanks on the smoker. I had been looking for several months before pulling the trigger. I'm a big proponent of frugalness in that I want the most bang for the buck. Granted a good cook can get great Q on anything it's just the level of effort you're willing to put into it. And for the money and multiple options with this grill it suited me perfectly. Plus I'm not into competition rather cooking to bring people together. So, the size is just right and actually when I saw it at BBQ Outfitters quite big. I could easily fit 3-4 turkeys in it without an issue. The fact that the heat difuser runs the entire underneath, with the exception of the sides to allow smoke, means even heating. Personally, I'm stoked, no pun intended, on this...and can't wait to start experimenting on the Q. |

Welcome. Y'all floating away down there?
Nice smoker. You can add to it if you ever need more space. I did this for a friend of mine who had one similar to yours and and a burned out New Braunfels offset.
We are looking forward to some maiden voyage food p*rn. _________________ D. Tillery

If I ever got serious with smoking, mean getting into competitions, then I could see the need. But right now, the Tejas is a perfect size that is more smoker than I can use right now.
As far as floating away...I'm building an Ark in my back yard as we speak. 20" of rain in the last two weeks with it already calling for rain every day this week. All the lakes from Buchanan to Travis are either way over max and/or were filling up at a rate of 1 foot an hr during the peak. Though right now it's mainly the run off that's filling the lakes there are still alot of flood gates open. And all lakes have been closed off to boaters indefinitely.
Needless to say I'm done with the rain. |

I hear ya. The more you smoke, the more folks will come around hungry. Once you get the BBQ bug no matter how big a smoker you get, you will always want a bigger one. You have a dang nice and versitile smoker there.
Don't forget to herd a few extra pigs onto that ark! _________________ D. Tillery

I've done the first seasoning with hickory and actually will do another before the first actual smoke/grill. I'm debating on doing either a good spiedie grill or some smoke chicken. Regardless, I can't wait to use this thing.
The size and versatility is nice for the home. Anything bigger for me is just plain overkill. Besides I want this and a gas grill with infrared grilling. I think that would make a nice combination...eventually building it all in together as an outdoor kitchen. Delusions of grandure as I dream of what I want...but hey we all have 'em |
