I've been playing around with wood combinations for smoking and I think I finally found my favorite for pork and other light meats. It's two parts pecan, one part apple and one part maple. That combination created a very nice medium smoke with just the right amount of sweetness. I think it might be somewhere between alder and hickory. I brought the pulled pork into work to share and as usual, it was a hit. But this time I also got feedback that it was just the right amount of smoke. I got words like "perfect" and "smooth." Sure, they might have been blowing smoke up my arse, but I doubt it. They actually confirmed my initial taste test before I brought it in. Anyone else try/like this combination? Just thought I'd share my experience.  |

I would agree that pecan and apple is probably pretty nice. I'm curious, though, if the maple actually came through the pecan.
I'm in west texas, right now, and can't stand mesquite. So, I use pecan for my base wood on everything. Beef gets either straight pecan or pecan/oak. Pork gets pecan/peach or pecan/apple. _________________ Leading the quest to abolish propane from Que'dom...

I had been using 50/50 pecan and apple recently and I really liked it. I got some maple a couple of weeks ago and decided to add it this time. For some reason, it just seemed a little sweeter and a little lighter this time. Could be all in my mind. I also noticed that the bark wasn't as dark, but that's probably due to using less apple. Maybe the maple did have an effect there.
I wish I had a hunk that I didn't pull and sauce. Then I could save it and do comparison. I'm catering a birthday party for 30-50 the week after fathers day and I was planning on using the 3-way combo for that. So maybe for fathers day I'll use pecan and apple for a small batch and save that for a comparison. Hmmmm, where's WoooDoggy when you need him? I know he's always game for experiments. |
