What's up with the no vents? How does Brinkman expect you to adjust the heat on these? Is it even possible? I just picked one up for free off of someone and noticed this.
Please explain how to adjust for different heat without vents to open and close? _________________ Hydra Sports 212 CC

Hydra, there are some who drill holes in the bottom to do the venting. Keep searching here for the topics. I didn't even realize this was a problem when I first started smoking...I just figured it was me. THen I discovered the WSM!!! In all seriousness, they can be made to work well. Alien has a great tutorial on how to make it happen.
For lots of folks that just are starting out thats all they want to invest. The problem is, that after all the frustration involved they quickly loose interest............. _________________ BBQMAN

I installed a vent in the Project ECB and frankly, I really do not think it matters. There is enough leakage in lid and radiant heat loss from the thin metal that it is a moot point. That's it in a nut shell. You add too much and it's gonna spike. Use onlya chimney of coals to start with and then add 5 - 6 pieces of charcoal every hour. _________________ "Tag line? We don't need no stinkin' tag line!"

That sounds strangly familiar... is it possibly the Brinkman Gourmet Charcoal Smoker? That was my first smoker; I got it as a gift. It has one hole on the very bottom of the unit and to get it going I had a 3x3 square piece of metal that I screwed to the bottom tray to control the air flow. It works well enough I guess. It is no WSM, but I think you can find them under 50$. Good Luck  |

I have been using the Brinkman for years. Never had any good results..
The coals would just set there and smother. No vents, no control,
Got my first WSM last week. 1st cook, great butt.
I guess what you pay is what you get!!

Now that I made the mods to my ECB, I love it. But if you want to use something right out of the box, the ECB is not the way to go. _________________ Chris

Or, right off the street!!! Good luck and keep the water pan, and bottom charcoal grate. Then use the grate on top of the WSM grate at a 90 deg for a finner screen for your charcoal/lump...this seems to work good for me. _________________ Kevin "Corndog" Cameron

I tried it, it will fit if you center on the wsm but it can fall if it moves maximum to one of the hangers. Any ideas for a modification?

I just sat the water pan on the hinges. I could move it to the back side of one hinge and it would fall off one of the hinges on the wsm. I did not put water in it. It might stay stay centered if it had water? _________________ JerryP |

With the large water pan, I line it w/ foil and then put play sand in it and then place anothe layer of foil on top of that. The sand works good for me, but there are some who prefer the water. I haven't had a problem w/ the pan staying in place. _________________ Kevin "Corndog" Cameron
