'If you start out as the $2 caterer, you will always be the $2 caterer'.
This does not mean that you have to charge up the wazoo, however you have to make your money.
We work hard at an event. Usually arrive several hours prior to guest arrival/food service time. If we have to set tables for a large event, the servers arrive a little ahead of us. We work very clean in order to have a clean work space from top to bottom.
What I am saying here is: What name do you want to make for yourself? The Utilitiy caterer who can be talked down? The cheapest caterer in town or what?
Define your parameters. Define your market.
If you 'think' you can't charge a decent price...Your clients with pick up on that and take advantage of it. They want the BEST posible food(s) @ a fair price. We (as BBQ caterers) have to convince the potiential client(s) that OUR food AND service is worth their hard earned money. _________________ Often imitated but never duplicated |
