I am cooking for 100 people this weekend. Because i have so much food, the pork butts will be done 8 hours before everything else. What is the best way to handle this? Pull and keep moist and warm or pull, chill, then reheat? Please offer some help!

The BEST way is to pull, vacuum pack, refrigerate, then re-heat in hot water right in the vac pacs. That way you can actually cook it well in advance. _________________ 18.5" WSM & 22.5" WSM
