bigkid&jeff t here ya go.(long).
use( smoke spanish paprika) for the smoke flavor because its easier to work with when making small quanity of smoething (liq smoke can be horriibly bitter in these circumstances-- feel free to use it though--see note*.
1/2 +2 T ketchup
4 T turbinado sugar
4 t plain(not season ) rice vinagar
2 T worcestershire
1 t onion powder
1/2 t garlic powder
2 1/2 t smokeed spanish paprika*
1/4 t ground blk pepper
scant 1/16 t cayenne
the key here is to pretty much keep the sauce at a constant simmer(med heat) from start to finish.as the sauce cooks and condenses it loses its tomato-y ketchup-y flavor for something more deep,cooked,and blended.
put small pot on the stove over med heat and IMMEDIATELY add the ketchup.as soon as it starts to simmer add the sugar and stir well simmer a minute,stirring constantly,then add the vinegar and worcestershire sauce, stir well return to a simmer and cook 2 minutes.
add the remaining ingredients, stir well and simmer stirring ocassasionally till the sauce has reduce and is colored more brown than red and lost its ketchup-y flavor (several minutes more).
for the night of the living dead sauce by cowtown.
add 1/2t ground dried chipotle pepper or 1/2t pureed canned chipotle during the last few minutes of cooking.
**note* be careful if you decide to use liq smoke.if you decide to use it add just 2 drops when you add the vinegar.replace the smoked paprika with 2 1/4 t regular paprika.at the end,just after you add the cayenne and before its final reduction, taste for smoke flavor.add a drop at a time but allow the sauce to cook a minute between drops,the flavor will concentrate so taste before adding each drop.

Thanks cb12 will try it for sure.
Cooking for my brothers small wedding in june, might mix up a bigger batch for that.
I googled "Cowtown BBQ Sauce Recipe" and found these two, what ya think ?

COWTOWN BBQ SAUCE
1 1/4 pints ketchup
1 1/2 cups sugar
1/4 cup apple cider vinegar
2 tablespoons molasses
1 tablespoon Dijon mustard
2 teaspoons worcestershire sauce
1 teaspoon liquid smoke flavoring
1 1/2 teaspoons salt
1 teaspoon black pepper
1/4 teaspoon onion powder
1 teaspoon garlic powder
1 splash whiskey
Combine all ingredients except whiskey and simmer 1 hour, stirring often.
Add splash of whiskey (or brandy) and cook 30 min. more.

Jeff Stehney's Cowtown Barbecue Sauce
2 1/2 cups ketchup
1 1/2 cups sugar
1/4 cup cider vinegar
2 tablespoons molasses
1 tablespoon Dijon mustard
2 teaspoons Worcestershire sauce
1 teaspoon Tabasco sauce
1/4 teaspoon liquid smoke
1 1/2 teaspoons salt
1 teaspoon pepper
1/4 teaspoon onion powder
1/8 teaspoon garlic powder
= Jack Daniel's whisky (splash)
Combine all ingredients except whiskey and simmer for 1 hour, stirring often.
Add splash of Jack Daniel's and cook 30 minutes more. Serve with cooked
BBQ. |

jeff t looks like ill have to try it.
the cowtown recipe i posted is pretty good. what i did was bought both types of the sauce and sent them to a chef in florida and he clone it for me.myself i love the sauce.cb12 |

This "chef in florida" is he a friend of yours or some kind of "cloning service".
There is a sauce available here in hometown, usa that the wife really likes called Sue Bee Original Style. Its a sweet sauce made with 48% honey. (so they say)
The wife would rip up my "honey do" list if i could get or make a clone of that stuff, her favorite sauce.
