i found a sale on baby backs and i am trying a few diferent woods today!
1 two slabs cherry and hickory mix
2 two slabs jack daniels pellets
3 two slabs thinking maple or maple hickory mix or mabey mulberry or possibly oak
hell i dont know what do you guys think???? _________________ Jp

| I just did a couple of slabs using maple/ hickory mix. I did 2 parts maple to one part hickory ( I mixed the two only because I didn't want to use all my maple). Everyone loved the flavor and kept asking what I did different. I have also had luck with apple and hickory mixed. I am sure you received awesome results. |

the cherry hickory was awesome
the jd cherry was awesome
but i did a pork butt in maple / hickory and it smelled like a raped monkeys butt. (flavor was ok though) i am wondering if i truly have maple? (bought it from local retailer in a bag) _________________ Jp

sometimes the mixing of a sweet wood, and a really strong wood create a undesirable scent to the nose.........just log that into the " don`t try again " category and move on......  |

| There are two types of wood that are readily available here in Nebraska that i have been using the last few cooks that i thought was a tasty combo that being Ash and Crabapple. |

i will try that i have a friend that just remodeled his kitchen and they have a lot of milled ash scraps that i have been meaning to get over there and pick up... i have about a cord of mulberry (been told it tastes like apple but never smoked with apple so i dont really know) but apple/crab apple is available locally so i will try that mix. im always looking for new tricks to amaze the friends and family with.
i am still getting fead back on the cherry/ hickory / jack daniels (pellets) baby back ribs i did though! wow! those babies where awesome! _________________ Jp

Oak for heat, Hickory for smoke, Apple for flavor is a good mix also.
I like most all fruit wood. Peach is good on its own, so is Plum. Cherry and Apple mix is good also, both are a good smoke wood on there own. But i do like mixing the fruit woods with hickory or some other type of hard wood so i dont use up all my good fruit wood to fast.
A good smokey mix that i like is Hickory, mesquite, apple in a 3-2-1 mix.
I`ve done quite a bit of playing with flavors but what i like best is....
Hickory and cherry for beef.
Cherry and or apple for all pork
Pecan for poultry |
