Today I am catering for a WA state agencey (per deim of $15 inclusive). We will be doing Beef Tri-Tip & chicken with, corn (half ears), ceasar salad and French bread. Don't seem like a good choice of sides to me but that is what the contact person ordered. 105 guests

I will be cooking 14 Tri-Tips (cap off, each 2-3 lbs choice grade)

For the chicken, 14 chickens (cut to 8-1) along with about 20 extra thighs.
(I orderd the chicken then this morning was thinking that was ONLY 1 piece each, think I need some extra).

For the sides.....32 lbs of chopped romaine lettuce for the ceasar

1 case of corn (96 pieces)

French bread....10 loaves. After I cut it, will have 16 pieces each loaf.

Lemonade for drink...

Necessary extras.... 2 gallons of dressing, 2 tubs of butter for french bread, butter patties for the corn, 2 containers of lemonade mix, Cups for drinks.

Have 3 briskets cooking on the FEC-100 for Sat P/U...should be done around 6-7 tonight.

What is a tri-tip? I asked my 'butcher' at the meat counter and he said it was simply stew meat.

The tri-tips I get are from Costco (choice and fat cap removed) I paid $4.29 lb. in cryovac (8 +/-) Was only a few cents less for a whole case. In the retail package (2 per package) they are $5.69 lb.

Another wholesaler had Tri-tips for $2.98 but fat cap on and select and inconsistant sizes....I will stick with Costco for this product. Wink

I just recently(last two days) started using Costco Tritips and I have to say Im impressed. Yesterday paid 4.34 case price. Talked with the guy and he said prices are gonna get ugly in the next few months. Of course it remains to be seen but at my meat wholesaler, his is 4.59 lb for a select cap off from Black Canyon Angus (whatever the hell that means) went up 80 cents a lb in 2 weeks. I thought is was a very good product till I did the Costco ones...

All this methanol nonsense is going to drive meat prices crazy soon. If you have a freezer, I'd suggest you stock up now.

Found tri tip steaks in our Costco at 6.29lb! Shocked

But they were delicious Very Happy
