Any tips on this. We will need some sort of water source for hands, pots etc...? If I take my smoker out and feed 100 do I need some type of mobile deep sink, if so, where do you get such a thing? _________________ DIAMOND D'Z BBQ Catering & Entertainment Svcs

I use (and approved by HD) 3 seperate plastic bins for dish washing.
Then I have racks for the dishes to 'air dry' on.
I use a 5 gallon Igloo water cooler with hot water for hand washing
The water in the dishwash does not have to be hot...warm is fine so don't put too much in at a time. Put water in first pan with a little soap, the second one water with a little bleach for rinse and the third just plain water for final rinse.
I set up seperate table for all of this, see photo....
The red bucket is my sanitize wipe down water for counters etc. _________________ Often imitated but never duplicated |

Dont you guys have to use a sanitizer in the 3rd bucket? Here you do.
1st bucket soapy water
2nd Rinse
3rd Sanitizer
D, be sure to talk with the local HD too...
For hands I bought a cambro handwash station...HD loves that... |

Yup Marv, I think you got the sequence incorrect
First bin soap, seconf bin rinse (plain water) third tank Sanitizer (AKA bleach water, then an air dry.
Wiping with a towel can cause bacterie to be spread when used for drying after the sanitizer rinse.
Instead of hot water for wash or rinse, temepered water can also be used (so manyy PPM of a sanitizer such as bleach.
Find the accepted PPM, and keep litms paper handy to check (HD rules in most states) _________________ Just remember that the toes you may step on during your climb to the top will also be attached to the a$$es you'll be forced to kiss on your way back down! |

Marv those are hot water heaters on your hot boxes right? and is that a relief valve on top?

Well not 'hot water heaters' per say...They are water tanks then as the stove heats, it heats the water in the tanks.
The thing on top of each is just the fill cap. They have a small hole in them to release steam and air pressure. _________________ Often imitated but never duplicated |

That is my brother-in-law (they were visiting for the W/E from Ore.) I laugh because when I first seen this pic (My sister took it), I asked him if he was talking to the power meter there??? Big Brother Smoke has a trailer with 3 stainless sinks. Now the question is, how do you get them hot/cold water to the faucets and were does the waste water go???? What if you are set-up in a park or something?

Not sure how HE did it but....You could use a 12V pump like from an RV hooked to your car battery to run the water...
Heating...You could heat some water on a burner or maybe on top of your fire box...in a pan.
Waste water....I just use a 5 gallon bucket and run my 'gray water' into that then take home and dump.
If you are going togo to the expense to put the sinks on your trailer, you could just add a 'gray water tank' for drain water. Then take to RV dump station to dump when needed.
Cheaper to do the way most of us do it (plactic bins). Stainless steel sinks are spendy...Then add the cost of parts to install etc. _________________ Often imitated but never duplicated |
