Well, my partner and I helped my daughters school Relay for Life team this past weekend cook and sell food for their event. I got there before lunch and set up everything and got the butts smoking good....I had some time to kill, so I helped several people set their canopies up and made some friends. Our plan was to sell bbq sammies, grilled honey buns, fried honey, tea and water. Well, I put 4 boneless butts on earlier that day in order for them to be ready about 4 PM, just prior to the event kick off....and we paced the other 4 throughout the day to stagger the compete time so that we didn't have them all come done at the same time. Everything was going great for us...we were swamped for sammies and the honey buns like crazy!! Turns out we were the only ones w/ that type of food..there were H/D, turkey legs, bbq chicken out there, but we were the only ones w/ our fare....Anyway, it got down to the last two butts,....they got to temp, we foiled and stored in our cambor to rest. When we got ready to pull, one of them was just "clumpy"...meaning that it didn't fall apart like the other ones..It didn't have the smoke flavor, and tasted just like an oven cooked ham...It pulled in big clumps, or chuncks and we decided not to serve it....But the other seven butts turned out great and smokey...Hmmmm.....
But the good thing is that we didn't have alot left over and our estimates were pretty well on..I was planning on 150 sammies and we did 120ish. I used the 10% of the estimated attendance rule that has been discused here.

That sounds like it was alot of fun. Great job
Never had a grilled honey bun but that sounds awsome. I have not eaten yet this morning so I think I am out the door at this min.Gotta try it.!

Good job Corndog. Any idea what went wrong with that one butt? Was it bigger or smaller than the rest? I've had smaller pieces of similar meat take longer than larger ones cooking at the same time. You just never know, but still should have had a smokey flavor, you'd have thought.

No idea Jim...it was the same size, and one of 8 in the same case from the same vendor...We smoked it to 190, foiled and then finished to 200 and then pulled to rest. This is how we did all of them. Sometimes you just get a bad piece of meat.... But it did have a good taste, if you were looking for "ham"....

As for the fried honey bun....we just take the honey bun, and yes, we dip it in funnel cake batter and fry about 15 or so seconds per side and there ya' go...top w/ powder sugar and if you want,,chocolate syrup!!!! Just have the devibulators handy!!!

Marv, I let the teachers set the price...but we sold the sammies for $3.00 and they were in the 5oz range. And the honey buns went for $1.00 (I suggested $2.00) and water and tea went for $1.00 each. Yes, this was fun, and they want us to help them again next year, so I think we will. It is a great cause, cause we all know survivors and those who didn't survive this terrible disease.

All that we donated was the propane to cook w/ , our time and services. The team gave us the $$$ to buy the food.
