| need help getting temp down using charcol and chunks put the ribs in and thought i would go down some but i am still at 310 open top some to let smoke esape to try and cool and spike to 400 |

| brinkmann gourmet the little vertical one from lowes with the water pan i have water in the pan aswell have oven thermometer in it |

you might need to use water in pan to keep the temps more stable.

| i have water in the pan i might remove one of the larger chunks of the mesquite wood to see if that helps i am very new to smoking this is only my second smoke |

opps
check with another temp guage if you have one. Might be off a little.\Most of the ecb`s just don`t work the best at keeping stable temps.
kinda surprised you get such high temps.  |

If it's breezy at all, try to find something to use as a wind break to block the wind off the smoker. Then you should be able to take the lid off and let the coals die down a little. If it's a little windy outside, usually when you remove the lid the coals will get hotter because of the wind blowing up throught the bottom. _________________ Mike

| Jay its really hard to maintain any stedy temps. in this type of cooker, you can make some mods. and it'll get pretty close also Alien has a thread or two concerning the mods. that'll help. |

Hmmm well one thing you can do is take out some coal. Or you could leave the dome slide to one side a little to let out some heat. Usually high temps mean too much air movement. Kinda hard to regulate with that style of cookers.
Might have to unassemble it and remove a little coal, just sounds like its burning to fast. |

DON'T open the side door, this will increase the air flow and burn the fire hotter.
Try a ring of foil to seal the gap between the middle section and the lid, and close the bottom vent down, you may have been opening it by mistake, try going the other way and see if that helps. _________________ Here's a change Robert.

| just took out 3 wood chunks im going to see if that work but i will get some foil and try that as well this smoker does not seal ver well at the lid |

Here is a thread about mods to an ECB (El Cheapo Brinkman), you might want to take a look and think about applying some of them between this cook and your next one.
Brinkman uprights are difficult to get a good consistant temperature out of, the mods will help you with that, lots of people get put off the idea of smoking because of buying an ECB, and having so many difficulties.
They, (ECBs), can cook good Que, but you might find moding it will make you a happier bbqer quicker. _________________ Here's a change Robert.

Just finished answering a similar question on another thread. To cure your problem pull some chunks out and remember no more than two at any give time. Another thing is, Mesquite is one of the hottest burning woods out on the market. Try a different wood or use a lot less. _________________ https://www.linkedin.com/in/michaeloberry |
