How much time do you guys allow for serving and how much money do you charge (if anything) when the serving time gets delayed? My reason for asking is last night we had a party for 75 and at serving time it started to storm and the host asked if we could delay the serving time. Serving time was 6:00 P.M. and it was 7:45 before the storm let up. So in short we were there approximately two hours longer than planned. How do you guys handle these types of situations?

Thats a tough one considering they werent at fault for the storm. Could you have still served the food? I think thats the question here. I charge 35 an hour per server and I give 2 hours for serving time from the start time.

I give 2 hours of service with every catering then it is $20 per server per hour. If it not there fault the serve time was late I feel it is good business just to cut my loses and stay there. If a storm is the cause and I have my equipment (made of metal) outside, I give them the food and tell them I must get my staff out of the weather for safety reasons.

The storm didn't last that long but the rain never stopped. It wasn't pouring, just a steady, slow rain. The tent and food buffet was set up about 75 feet from the clients home and the guest didn't want to walk from the home to the tent to get thier food in the rain and there was a full bar with bartender in the home to keep them occupied. I look at it like this. If I had been a guest it was not enough rain to stop me from getting a plate of fresh "Hot Off The Grill" barbecue!

We live in the NW.....rains ALOT...in winter Laughing I did a wedding on July 4th one time and rained 'cats & dogs' but never stopped the guests from coming out to get their plate of food and RUN back to cover... Laughing

I say 1 or or LESS...I seve the 'standing line'. In other words, when the food is ready, I serve the ones that want to eat NOW. Those 'lolly gaggers' can eat it cold after I leave..if they are 'too busy' to come and eat when it is ready.

If the host/hostess asks me to stay later it is $100 PER hour billed in 15 min increments.

If The serving time is delayed, it is $100 for every hour of delay billed in 15 min increments.

I serve right from the BBQ (in front of the BBQ actually) IF they want me to move the serving area it is $100 UNLESS it is a dificult move...such as up stairs, over rocks....hard on me and crew in other words...Then it just depends on how difficult it is and I decide on price after making my assesment of the situation.
