I got a wedding coming up in June for a whole pig. I need to purchase a cooker that will take smoke, so this rules out the La Caja China. My smoker though relatively big does not allow for whole pigs due to the design. I contacted this company http://www.asadorcubano.com/english.html
However, they are on backorder and I wanted to get a practice cook in before the wedding and he cannot accomadate me to the end of May. I do not need the stress of potentially screwing up someones wedding.
So, I am asking for suggestions. I need something to cook the pig on for under $400. |

Try the catering rental section of yellow pages, around here they have all sorts of grills and cookers. _________________ Here's a change Robert.

My thoughts on that Mike is to put my pipe smoker inside with the pig. This is a work in progress........ Well it seems like a good idea

That's a good idea Michael. However with that style of cooker you have no way to replenish the wood chips. Unlike ribs, it takes a fair amount of wood to smoke a whole pig! _________________ BBQMAN

have you considered doing it on a spit?? over coals & chunks? Minimal equipment, but more cook time required. You will need someting to protect the lawn from heat & grease. I have used thin masonite board duct taped on the bottom with gravel & sand on top for a charcoal bed.
I love seeing a pig cook instead of it being locked away in a closed box.
Go over to http://www.rupenas.com/roasts.html to see how we Wisconsin boys like to do it. it is most commonly called "Spanferkel" from the heavy german immigrant population that chose to live here way back when. _________________ Just remember that the toes you may step on during your climb to the top will also be attached to the a$$es you'll be forced to kiss on your way back down! |

I agree Mike; it does take a whole lot of wood. Here is my thought process though (and this is a work in progress). The designer says that you can cook a pig in a little over 3 hours, they also say that it is similar to a pressure cooker (although I find that hard to believe). However if you put enough chunks in the pipe to burn for about 2 hours (it could be done) the smoke is going to lay on top of the pig and give it a smoky taste. I am not saying this is the answer or even if it would work but it does have the potential to work! _________________ https://www.linkedin.com/in/michaeloberry |
