Where would be the best place to buy ribs in bulk (the case) frozen or unfroze?

Note: uncooked ribs I want to cook them myself.

Sams Club / Costco or a meat packing place if you have one near you.

If you can avoid frozen, (hard frozen), you will find them cryovaced and chilled in 3 to the pack, 3 packs to the case all over the place, a case would set you back about $70.00 at the moment, (or just over), for 9 racks of ribs.

If your going to use those frozen ribs by the case make sure you order "shaterpack" they are packed with paper between slabs so you can get to work on them right away Cool
cryovaced is alright if your only using 1 case or less at a time but for multi case cooks they will slow you way down.
Next is to decide what type and size/cut you want to use. Babbyback/loin, St louis/K.C. cut or full spare ribs.
Most expensive and smallest are the BB's next is the trimmed spare sized about a lb or so less than the full spare. You can argue that they are more expensive than full spares but some don't want the rib brisket/tips and belly flap on the ribs in the first place. With the trimmed rib you pay more per lb but only pay for the part you want.

If you have a food service facility or a commissary kitchen, I use SYSCO foods. The last big event that we did ( 12k) we ordered 1200 lbs of pork butt and 90 racks of ribs and they delivered it to my church kitchen and I just took my truck over there and picked it up.

But with SYSCO, it really has to be in bulk

while you're on the rib subject. what's a good estimate for servings? would you calc by the rack or lb?

depends on the cut 3-6 bones of a full spare 3 1/2 and down are a lot more eats than BB or even trimmed.

Lately Ive been using Curlys frozen and I cant believe how good it is...better than fresh IBP's...
