See, I just don't get that. Why didn't they ask about an extra side. I lost a gig because of something similar. I bid a hamburger and dog & chicken. Then I find out they went with just burgs and dogs and never asked me a price on just those items. And it turned out the other bbq people burnt/hockey pucked most of the food ... |
Gordon (and others) the only thing I can think of to do is... Ask them EXACTLY what do you want me to bid on. Also, if you seek OTHER bids, are you going to compare 'apples to apples'. In other words, EXACT menus. labor costs etc.
Another job (a state job where they had to meet per diem) another caterer (NOT a bbq place) offered 2 meats (same quantity as I but not same meats NOR cooked same way and NOT cooked on site). I was offering 3 sides and the other guy was offering SEVEN sides...Yes, I said SEVEN SIDES!!! I REFUSE to 'give" my stuff away! I am beyond that in my career...Thank GOD! |
7 sides...unreal...I agree, I will not give my product away either. I take pride in what I offer.
I did ask them to compare apples to apples and even pointed out what extra charges my comp throws in. |

I've always followed the rule that in negotiations, no matter the "point" you've reached in your career, you have to weigh what you're willing to lose against what you're willing to give up. I don't think I'd pass up a nice paying gig over a few dirt cheap sides.
Of course I understand there is a cutoff point for everything. That's were the "willing to lose" part comes into play. |

I agree that BBQ catering is viewed as a cheap alternative. I have a local bbq restaurant that does do some really inexpensive delivery catering. I would not want to have to compete with them for customers, my client base is one that I have built with championship quality BBQ and sides, not mass produced smoked & canned stuff dumped in a chafing dish.
Others have also mentioned never set your prices too low, difficult to be able to raise them and keep customers. |
Ain't that the truth. A BBQ Chain in San Antonio and Austin (Bill Miller's) has delivery catering with servers that start at around $6.00 a plate. Add extras and all and it goes up, but it's still very inexpensive. There's a couple of other bbq chains that are around that price too. I guess that's why sometimes people are shocked when an "on-sight caterer" gives their price. _________________ "Tag line? We don't need no stinkin' tag line!"

We have that here in NC as well...but we offer different and higher level sides and items just to make us stand out....It has worked well so far, but it has kept our prices lower than what we really want. _________________ Kevin "Corndog" Cameron

That's good advice for just about any business; I know it is in the design and marketing biz. BBQMAN and Marv sure aren't afraid to charge their clients and they seem to keep quite busy.
Then again you can't blame folks for gasping when you claim pie is a "deluxe dessert"! Just kidding BBQMAN. My Grandma's Bourbon-Pecan holds it's own against just about anything else I've eaten, so I know what you mean. |

That is very true...and HAS taken SIX MONTHS but generally 90 days and they take 'every damn one of them'!
The state is generally 30 days max but enough of them know me and try to get it pushed through in about 10 days or less. _________________ Often imitated but never duplicated |

Hey Marv, do these same gov. people take 30-90 days to pay their bill at the local restaurant as well? I know up here in Canada we pay before we leave the building or the cops will be on our a$$!! If they have to pay before they leave the restaurant, I don't know why they should think a catered meal should be any different. _________________ 18.5" WSM & 22.5" WSM

Total BS in my books. Do your suppliers give you the same 90 days? BTW at income tax time do you get 90 days to pay--interest and penalty free? _________________ 18.5" WSM & 22.5" WSM

Well for one thing, you KNOW you WILL get paid...eventually.

I do the pay as you go thing too..cuts down on the added paperwork... |
