This is a SMALL place that is family owned....Mom and Pop own (not sure exactly WHAT they do) but the son and daughter do a lot. The daughter makes ALL the desserts & soups (cute little thing) and the son makes ALL the pastries and bread for the sandwiches (makes a mean Cajun bread).
Then they both (the kids) wait on the tables at lunch time....Only open from 10 AM-3 PM M-F.
We always sit in the son's (Tim) section and have gotten to know him some over the last few months we have been going there. (We go maybe once every week and half, not that often).
So today he is telling us the 'specials' of the day and he says "smoked pork loin" sandwich. So my wife abrutly asks....ohhh do you have a smoker here???? (I already knew the answer but wanted to see if he was honest with us). He said.."No, not here" So he didn't seem to want to 'volunteer' this information so my wife asks another question (she is good ) She asks...."ohhh where do you 'smoke' it at then??"
So he leans over our table and 'wispers' "At my mom's house on her TRAEGER!!!!" I nearly fell over. Here they are a reputable resturant and they do this kind of thing AT HOME???
Goes to show ya, the HD can't be everywhere at the same time...  _________________ Often imitated but never duplicated |

I think you would be unpleasantly surprised at how many things are actually done like that Marv. especially in this area! Scary isn't it?
What else have you eaten there that might have been home-cooked? with pets wandering around the kitchen?
I have seen cloeslaw being made at home in a large cambro box for a restaurant that averages 500 peeps on a friday for a fish-fry. No utensils, or gloves, bare hands used for mixing after petting the dog that was hanging around.
A french bakery owner making these fancy lace cookies at home for the retail store. (cats on the counter)
I used to install & service satellite TV equipment and digital & analog antenna systems, so I was in many many houses in this area.
Then we have wild game feeds happening at restaurants around here too!
Closed to the public at the time of service for private parties only. but lots of wild-killed, uninspected meat sharing cooler space with the inspected food for the general public.
Would you want raw russian boar meat being sliced on the same slicer that cuts cooked meats the next day for your sandwich at lunch time?
I have heard this statement a long time ago;
"if you ever see the kitchen at your favorite restaurant, you'll probably never eat there again"
Now think of the shortcuts you take that you think are bad, they don't seem so bad anymore do they? _________________ Just remember that the toes you may step on during your climb to the top will also be attached to the a$$es you'll be forced to kiss on your way back down! |

Ain't that the truth...Stand back and watch SOME of the people at the fairs and such events....Sorry guys, I don't eat there unless I SEE them wash hands OFTEN!!!
Oh they HAVE the wash stations......just not in use on regular times. _________________ Often imitated but never duplicated |

I have been out with Asian friends and we went off to 4 or 5 different restaurants before going back to the second one for dinner, they were all surprisingly clean and tidy, but there was something about the style of cooking of the second chef that suited Momma Gi.
We had a great meal well worth the extra hour of wandering a round, but i can't see many restaurants allowing such a deep inspection, apparently it is common in the Asian Indian. _________________ Here's a change Robert.

| Yup, doesnt surprise me. A few days ago, I was at the restaurant suppy store and walked by a pickup truck. Took a double take, even triple. The back of the bed was piled high with cases of chicken. No ice, no coolers, no nothing, just boxes with the sun shining done on them.... |

I was doing a party for the local Ford dealer last year and saw a pick up in for service, oil change AND car wash....was 2 open cases of BRISKETS in the back!! don't know what these people are thinking.......or ARE they??? _________________ Often imitated but never duplicated |
