O.K. guys,

I am getting ready to do a gig(freebe) for our local little league. Need some help.First hear is my original plan, Please correct me where I am wrong. Because I really don't know, just going on a hunch.

We are opening 2 new fields, with all the pomp and circumstanse.Newspaper, local officals, etc.

We are having a total of 8 games that day, 16 teams so I figure that's 192 players,with 2 parent's(?) that's 576 people plus.

I plan on serving pulled pork sammies, Pit beef sammies, BBQ chicken
Sammies are 5.00, Chicken 3.00
No Sides( No room to haul everything in my durango, With soda's and all)
Sammies go on a 6 inch Hogie roll and I am guessing that I am putting about 4 to 5 oz on the roll, I don't ever measure just try to make it look apealling.

How much do I cook for?
was thinking of doing 2 cases of pork, 1 case of brisket, 1 case of leg 1/4'ers, and possibly a case of ribs for the diserning buyer.

I figure I can feed 324 for that. Am I correct in...........

A) My amounts?
B) My estimates of actuall customers(Crap shoot)

#1. How soon is this happening?
Do you have time to include that you will be there selling the food along with the advertising of the new field opening?

#2. If you are doing this as a 'Freebie' I assume the $$$ made is going to the league?
If so, the organizer SHOULD have no problem including you in the advertizing of the new opening. You could say mutha chicken bbq will be on hand selling his GREAT barbeuce with ALL the proceeds going toward the leauge You NEED to let the people know you will be there so they won't eat BEFORE getting there.[i]

#3. I wouldn't get TOO carried away with all different kinds of food. K.I.S.S.
Maybe pulled pork sammie and brisket sammie. See how it goes THIS time. You can serve these just using grease paper (like burgers are wrapped in). This is something they can walk around and eat. If you did chicken and/or ribs, you would need plates and a place to sit.

#4. I REALLY doubt you can count on serving 56% of your group.
[i]I would guess you MIGHT get 30% of your group of 576. I would prep for 200 (just in case). In your advertizing, I would say "we will be serving from X O'clock to X O'clock or until the food runs out....so GET THERE EARLY to get your great barbecue sammie!!"

#5. For that price ($5.00) I HOPE you sell them.
[i] I would be tempted to sell for $3.00-$3.50 and SELL them and not have to take them home. But you can always start out at $5.00 and go lower if you think they are not selling.


#6. Now for the amount of meats...
What sells best in your area..Pork or beef? I would go with a 75/25 split on those.
For the 75% (150 sammies) & (assuming pork) I would go with 90 lbs of raw meat will give you about 46 lbs cooked. Figure on putting on 'about' 5 oz each sammie.
For the 25% (50 sammies) & (assuming brisket) I would go with 3 or 4 9 lb briskets figuring the same 5 oz portion.


The biggest thing, you have to let the people know you will be there selling food or take the risk of not selling much!!

Since this is a vending situation, yes its a crap shoot...Will there be any advertising to the people (parents) ?? Are the managers going to pass on the word that BBQ is going to be available & what is being served???

Thank yo for taking the time to figure that out for me guy's.

Let me add this.
I am on the board at little league,Last year I did this about 5 times at our league. I did not advertise I was doing it, and did well. I sold out all but one time. But I was only bringing 4 butts, and 2 briskets. Mabey 30 pieces of chicken.But it was for about 3 games on a sat.

All money goes to the league and I will do this a couple of more times this year. They reimburse me for my expenses. But sometimes I don't even charge em.

The reason I charge 5.00 a sammie is because the McDonalds is up the street and if you want to go get it knock yourself out but if A) You want real food I am here. B) I tell people it is a fund raiser. Seems to work well so far.

I don't really know what sell's hear, There is only a couple of BBQ joints around and to be truthfull, They suck! Sad

You are probley right, No chicken or ribs! Mabey I could add a sausage Pepper and onion sammie. Or porkette .............Or K.I.S.S.

I guess I will have to suggest that they advertise this heavy. Thanks from myself and the board, And most of all the Kids!! Cool
