Got somewhat of an odd request and I wanted a little help with pricing.
65 - 70 guest
Ribs - probably spares
Grilled Salmon - Sam's price is 6.28 lb
Grilled corn on the cob - current price is $20 - $28 per case - I'll need two cases.
Slaw
Baked beans
Tea
Dessert - Walnut/chocolote chip brownies
Cups, plates, napkins, utinsils |

Are you preparing enough of each meat for ALL 65-70 guests???
How much per person (weight) do you plan on serving???
If so, in your area I have to assume the 'rib' portion of your meal is selling pretty cheap. Where as the 'salmon' portion is more of a 'speciality' meat so you can get a quite a bit more for it.
Figuring on a 6 oz portion of salmon with 2 ribs.....
Putting the 2 together, I would say...in MY area, that would bring $23 a plate with all the other things you listed to go along with it. You could probably get $19.95 and still make a good profit.
One thing to remember...just SAYING the word 'salmon' comands a higher price..
I cook the salmon as a whole filet (skin side down NO brine, dry rub only) then cut it right before serving to APPROX size needed (no scale). But I have done enough to get a 'good feel' for portion sizes. A 6 oz serving would be about 2" wide. A 8 oz portion would be about 3" wide.

Carolina, like Marv said, the salmon will bring a higher price. But hopefully those who want will understand that. You have pretty simple sides, so that is a good thing, and the spares will not need alot of tending. I don't know how much work the salmon is, other that what Marv said.....So, it looks like an easy cook. As for price, I think he is also right in the $19.00 range, but if your area is like mine, they might be expecting something like $15ish....  _________________ Kevin "Corndog" Cameron
