Hello all,
I am new to this forum and I am looking for advice about smoking chickens.
I have a bunch of seasoned maple, and I want to use it to smoke chickens.
Is this a good wood to use? Also, do you guys use only wood when you smoke or a mix of charcoal and wood?
When I get more time, I want to cook some brisket and ribs But I am experimenting right now.
Thanks in advance for the help

The maple will be great for the chicken especially if you do a honey lime marinate and a good dry rub.
For my smokers DPP 50, DPP 70 CharGriller, and Weber's I usually start with charcoal and once it gets going add sticks. I usually use a mix of woods Apple, Wild Cherry, Maple, and Hickory. The mix will depend on what meat I'm smoking.
