Ok, need a 'lunch' menu....

I currenty don't have a 'lunch' menu, I just serve my regular menu but a little less amounts.

What I WANT is a 'sandwich' thing but MUST be BBQ related..Also, price wise, I need it to come up to $11.73 PP.

I am thinking sandwich (where I need your help), bag of chips, drink (canned soda), dessert (cookies or brownies).

I've done the sandwich, bag of chips and canned soda before. No dessert, but I did two cans of soda per person. Anyway, if I'm reading right, you want it to be $11.73 per person, or is that the max you'll go. That's kind of a high price, but supply and demand may be different in your neck of the woods, and maybe it's for a smaller crowd.
My event was chopped beef sandwich (pickles and sauce on the side), bag of lays (from Sam's) and two canned sodas. Price: $7.50.
It was for a group of 50 and I remember my cost of food, utensil/plates, lump, ice and misc. items was at around $3 per person.
Marv, your outfit looks much nicer and more professional than mine, so that might also be a factor for you charging more.

I guess I should clarify the 'reasoning' behind my thinking.

Being in the state capitol, we do ALOT of state agencies for lunch. Their 'per deim' (max they can spend per person for lunch) is $15.00. This has to include tax and grauity. It CAN be less, but not more. I am going for the WHOLE $15, not just a part of it.. Laughing

At our current menu pricing, we have to 'discount' $2.84 PP to get the jobs. (after adding grauity and tax).

So I was looking for something CHEAP that I could serve and still get the WHOLE $15 allowed. I really don't want to go away with selling a $7 sandwich. If that is the case, I will stay with what I am doing so I can get the whole $15.

Knowing your situation, I'd go for what I can get too! $7.50 was just a regular old customer, actually a friend of the family. That's who I mainly cook for. Your case is definitely different.

Country club pricing!!
how about an $8.00 BLT, or a $9.00 hamburger

Could you do a sammie & a rib or two with it, maybe a bulid your own combo-plate thing, but planning that and the possible leftovers would be a killer.
Set number of guests, or no set numbers?

I am drawing a blank on "BBQ related" lunch sandwiches right now.
You are avoiding cooking to order right? All my lunch menu stuff I do is designed to be cooked to order because I am in an actual kitchen with a huge cooler arrangement to hold my unprepared items.

I actually charge (current menu pricing) $13.95 for hamburgers with basic condiments and 3 sides.

But I COULD cut out the sides, add a bag of chips and Iced tea for the $15 price.. Wink

This is a 'set #' of guests. (min 50) I would PREFER all eat the same thing, but for sandwiches, that might be hard to do.

I was thinking, pulled pork, brisket, pulled chicken/turkey, burgers/dogs, sasuages, smoked ham, french dips....just what I could think of off the top of my head.. Rolling Eyes

We COULD offer a 'TRIO' of meats so they can make own sandwiches from a 'selection' of meats. With a limited number of 'go alongs' I think I can come up with something out of that.

Also, here we HAVE to have vegitarian items to offer too, but we always know how many in advance.. Embarassed

I have no catering info, only what I want for a bbq lunch.

I want a small bbq sammy , either pork or beef (chopped meat)

1 small side. ( beans, slaw, chips, potatoe salad, , the customers choice)

1 drink.

No dessert.
