First and foremost, thank you Mike, and the others who gave advice about a catering job I had at my office. Everyone loved the pulled pork and chicken and I had a good time putting it all togehter. It was, however, way more work than I had expected, which leads me to say that I have the utmost respect for you guys who do this on a regular basis. It wiped me out mentally and physically making the pork, chicken, beans, and cole slaw, then getting everything to sync the day of the lunch. Thank you, thank you, thank you. I just got back from the Lake City BBQ Competition, and I wasn't half as worn out as after the catering stuff.

My quick question: one of the people at work who attended my lunch has asked me to make pulled chicken and baked beans for 15 adults. I'll make it ahead of time and give it to her. I figured on about 3/4 of a gallon of beans and 7lbs raw chicken, which will yield around 5lbs cooked.

Any thoughts?

1 #10 can of beans will feed 25, but it is the cheapest way to buy the beans, (ready prepared), so just buy one can, (make it your own with some molasses and a little spice), and then add the chicken to it in a foil pan, lid it tightly with foil.

Tell her to re-heat in the oven @ 225 -250 for 45 minutes - an hour.

Make sure she knows the legal temp to bring it to here it is 165 degrees for reheating. Liability reasons

I would cook 3 or 4 chickens and look for $5.00 - $6.00 / lb cooked weight 4 X 3.5 lb uncooked will give around 10 lbs cooked meat you are still only looking at $50.00 - $60.00 or $3.33 - $4.00 per person.

Chicken?

I do not like portioning chicken by weight, because it is always served by piece.

So 8-pieces per bird, 2 of each section. 15 people figure one piece per perso, or 1/4 bird per person either leg/thigh or wing/breast.

then you get into the white meat or dark meat argument, ask if thigh/leg combos would be ok, or all white meat, or a mix and let them be responsible for whatever happens. and price accordingly by the weight of the total amount of pieces in that weight.
(am I making sense?)

Unless you plan on serving a pulled chicken deal, then figure your yields by weight.

Harry, If you go back and re-read his post, he IS doing a 'pulled chicken' meal.. Wink

I would go to Costco/Sam's and get the packges of bone in breast. Here they are about $1.99 lb. There is about 8 per package. I would get 'enough' (if you get more than needed, freeze the rest). Then sell for 3-4 times your cost. (this will cover merchandise cost, labor and all and give you a nice profit for your efforts). Figure on 4-5 oz per person for sandwiches cooked. If you don't have a scale, good idea to get one.. Wink

The beans, I would go to Super Market and get 2 of those large (tall) cans of beans. This should be enough for 15+ guests. A gallon (#10) would be TOO much. Do the same price for them (be sure to add in your other costs if you add anything to them) then sell for 3-4 times your cost.
