I offer baked potato with butter and sour cream as a 'side' but I was wondering if I REALLY did it up by adding MORE. Maybe shredded pork or brisket, cheese, onion...etc. Could I get MORE $$$ for it by offering it as an entree'??

If so, what do you think we could get for 'Marv's Gourmet BBQ baker's'??

Maybe instead of the meat, offer TOFU for our vegetarian friends... Sad

Marv,

We have done them for catering and retail depending on the add on we charge between $5.95 and $6.99 as an entree. For the potato we use a 70 count Idaho potato bake and then cut and stuff with 4 oz protein, 2 oz of veg.. portion cost are between .59 and 1.00 again depending on the add ons. I would stuff them prior to event then throw them on the smoker to finish them smoke add a nice touch to the flavor of the potato. For the vegetarian do a baked tofu or fried ( marinate it before baking your choice)

At restuarants, Ive seen them go for 6 to 8 bucks fully loaded. This is also an item that will make my menu list when things get settled down...

The fully loaded potato at McAllisters Deli, I believe that's the correct place, ways over 1lb. They take 2 potatoes and cut 1 end of each and place them together so you can't really tell, just looks like 1 big potato.

We do what we call a pig tail. We use a 70 ct baker and put in our spiral fry cutter, fry it, cover in shreaded cheese and topped with bbp pulled pork. We get $5.50.

We have this little joint in town called 'Spuds'. More often than not they're out of potatoes when we want them...go figure. Last night we were in luck and I got one loaded for the wife and one original (butter and sour cream) for me. Anyone wanna guess how much I paid for them???

Anyhoo...

I got mine home and added pulled pork with BBQ sauce and it WAS AWESOME!!!!!!!!!!!! Might be a good idea??? Pulled pork potato??

Absolutely!! Check out a McAlister's if you get a chance. They sell spuds as a meal, and they are very good and filling. They have quite a variety.

Also, Sticky Fingers offers pulled pork stuffed tater skins topped with cheese on their menu, and they are great.

Chili poured over a baked tater is great as well.
