Hello All,
I bought some ribs for the big weekend, but all that was on sale were some monster racks, approximately 4.5 lbs a piece. I'm fully aware of the 3-2-1 method, but it seems to me that that is for 3.5 and down spare ribs. How much more time do you suggest to get the 4.5 pounders to be tender and enjoyable? Does method become 4-3-2 with these things?

You should be fine going 3-2 and then adjusting the 1. I've never seen a side aof spares that could be done in 6 hours. But, if you hit them with a probe or a toothpick and aren't tender go 1.5 on the end. I certainly wouldn't go more than 2 in foil or you might end up picking the bone up and the meat staying on the plate.

What are you cooking them on and what temp?

Thanks for the advice K.C., much appreciated. I'll be using a UDS and was planning to cook them at 250. I may bump it up to 275-300 on the back end for some loaf pan chickens.

250 on your UDS should rock those things. WSM, UDS the ambient heat always cuts some cooking time off at 250 vs my stick burner at 250. Have a good cook and a great 4th weekend.

Thanks K.C., the ribs came out great, wound up not wrapping them during the cook because I was going foil them and then transport them in a cooler, and I didn't want them to turn into mush. Hope you had a great 4th.
