I'm satisfied with the result when I smoke pork butt. My ribs are the best my wife says she's had. (She likes 'em sweet and fall off the bone, ...so a little sauce, foil, and time is all it takes.) I'm not a fan of pork loin ...when pork tenderloin is so easy to nail. (The bacon weave makes a nice addition too.)

I don't do chicken often, but my family likes competition chicken thighs and "roadside chicken".

I'll usually cook a couple of turkeys about this time of year and my mother-in-law usually gets one for me to smoke for the family get-together.

I don't know that I've ever smoked anything beef (except some tips as a component of bbq hash).

What's something I'm missing out on? What's one of your go to dishes? What draws rave reviews that you enjoy cooking? I've got a storage building full of clearance-priced charcoal and looking forward to smoking more.

Do any of y'all have any recipes or tips for any of these suggestions? Time, temp (cook/finish), and any seasonings would be a good start.

I love doing beef ribs of all types. Keep it simple and take the meat to at least 200 degrees. See the few posts I have done. Blues Nation Smoky mountain sauce is my favorite.

Smoked meatloaf and fatties are just fun as hell

Smoke Prime Beef is a blast - do not take that to 200!

Deviled Eggs and oysters are both quick - get a good crowd pop.
