I have made a video on how to prepare and smoke a Spatchcock Chicken. In this video I'm smoking at 225 to 250, at that temp it takes on a lot of smoke flavor. If you want a little crispier skin then the cooking temp should be higher. I think the next whole chicken I try I'm going to smoke at around 250 until chicken temp is maybe 125 or so then crank smoker temp up to 400 or so to see if I can get good smoke flavor and a crispy skin. That video will be coming at future date ....

What tastes do you recommend for this? By the way, it is great to see your video. Waiting for the updated one.

I would simply shoot for 300-350 for the entire cook. And that's way too much smoke for chicken...for me...but everyone wants something different.
