Thinning knife blades

Ever hear of knife thinning?
It came up on a cooking forum. The idea is that as you sharpen
your knife the edge moves up on the blade and the blade gets thicker.
Eventually even if the blade is sharp it doesn't cut as smooth
because its too thick. see pic


I've never heard of knife thinning before. It seems to me that if
this is a real problem there would be sharpeners that thin the knife.

I truly have never heard of this but I can see if you do not know how to properly use or maintain your edges and you excessively sharpen then instead of just honing the edge you could wear out a blade.

JMHO but a lot of people cannot put a proper edge on anything sharp & even fewer know how to maintain one...

Those should probably learn or at least have a good source for reclaiming the edge. Laughing The only knife I have professionally done is my 14" wusthof brisket slicer as I do not have a hone long enough to handle it. It cost me 5.00 to get it done.

I am a nut for keeping things sharp - hell I even sharpen my shovels.
Axes, mower blades, chisels, & knives all need to be sharpened differently..
