It has been too long that we cooked up a fatty. I decided on a Chorizo, jalapeno, onion, tomato omelet fatty. Very Happy
Looking good.


I got it rolled up.


Laying on 2 lb.'s sausage.


Rolled and wrapped in bacon dusted with SuckleBusters Texas pecan rub.


Fired up the kettle with some apple wood.


On the kettle.


Done and resting.


Sliced.


Served on a bun right off the cutting board. Very Happy

Hmmm... never thought of an omelet fattie, usually my b'fast fattie uses scrambled eggs. I will have to give this a try.
