I made some summer sausage and it grew mold on the casing while being in refrigerator for a week.Some didn't grow mold on it and both taste good but do any of you know what caused this mold.Thanks

what color mold?

A white powdery mold is acceptable, a colorful mold that grew a root through the casing is not.

Simple cause, contamination by hands or work area.
I like to make sure all my equipment is clean, and I wear clean food handler gloves while working.

Another option is to soak your casings in a mold preventative solution, the name of it escapes me right now, but it is available at Butcher-Packer
