per 5#
2 oz. Kosher salt (about 1/4 cup)
1 tsp. Cure #1 (aka pink salt, Prague Powder #1)
2 Tbl ground pepper
2 tsp. onion granules
2 tsp. (5 ml) garlic granules
2-3 bay leaves
3 Tbl. Maple sugar
3 Tbl.Maple syrup
5 lb. fresh pork belly
seal in ziplock bags and turn every day
... 10 days later
We want to get the salt off the meat.
1. Rise pork throughly under COLD water.
2. It is OK to rub off the seasoning
3. Soak pork in COLD water (some ice) for 1 hour.
4. Pat dry & wrap in towels and put in fridge.
Next day smoke it. _________________ -------
