Sorry I don't have any other pics other than this one.
So I finally got to use my WSM 22.5 on Saturday. It was a "chilly" day in Southern California and I smoked 2 Tri Tips.
They were both rubbed with Salt and left overnight. And 2 hours before smoking, Rubbed it with Onion Powder, Garlic Powder, Cracked Pepper and Paprika.
Used the mini minion method and smoked at 225-240 for about 2 hours with the internal temperature of 130. I let it rest for 30 mins. Then before serving did a sear on the stove in my Lodge Skillet. Sliced it thin and served it on a toasted Steak Roll brushed with Butter and sauced with a couple dabs of a KC BBQ sauce I made a week ago that I thinned with Apple Juice and Apple Cider Vinegar. |

Ha, looks great. I've never done tri-tip. I guess I should start.
As for "butchers" the other day I asked the grocery store butcher if they had beef short ribs. She walked down to the pork ribs and stared a while and then said no we don'y carry those. I said that's PORK! I found them after she left. _________________ -------

Ha, looks great. I've never done tri-tip. I guess I should start.

Meat cutters and butchers cost too much for grocery stores, so they employ "clerks". The Albertson's near me had a great clerk who know her thing. Then she got promoted or transferred. They replaced her with a girl who was cute, but, well she was cute....
I had asked if they had any of the boneless, skinless chicken thighs that were on ad for 1.59 a lb. So she goes to the back, and asks how many I wanted. I said 6. So she packs 6 of them up. Rings them up as some organic free range chicken thighs and wants to charge me 8.99 a lb.. We had the following conversation:
Me: Why am I being charged 8.99
Her: these are the free range organic ones.
Me: are these on ad?
Her: no.
Me: I wanted the ones on ad.
Her: Why didn't you say so?
Me: I did when I asked for the ones on ad, and pointed to the ad to show you the ones I wanted.
Her: So you don't want these?
Me: No, unless you give them to me for 1.59 a lb.
Her: I can't do that.
Me: Then why don't you get me the ones on ad.
Her: I checked and we didn't have any.
Me: Then why didn't you tell me that.
Her: I didn't know that was what you wanted
Me: But you said you checked and didn't have any. Can I have a raincheck for them? Or would that be difficult for you to figure out?
And I walked up front and got a rain check from a Manager. |

That Tri Tip looks like its cooked to my liking......yes a little horseradish(hot)would really kick that sammich up.....
Tri Tip is just something you do not see in my neighbor hood....maybe once a year i can score one ......when I do I really enjoy it...
