Monday is Boss's day so the secretary's asked if I would cook a gumbo. It will be smoked chicken, sausage and okra gumbo with eggs of course.
Here are the birds resting after their pecan smoke sauna.

The Gumbo Master is back at it....I swear when im off for my winter break I am going to attempt my first giant pot of gumbo....with eggs of course.

But I am going to get the Gumbo Master...to give me the run down on it once more. Very Happy

That looks like a nice pot of gumbo. I believe I could eat a bowl or 2 of that. Nice job.

GreenSmoker, I'm here to tell you that everything I ate while visiting Kevin and Debbie last spring was really damn good...especially the gumbo Very Happy

I must say, I've never had eggs in my gumbo. Then again, I've never had gumbo below the Mason-Dixon Line. Are the eggs a Southern thing?

KAM how do you make your roux? Is that just flour and oil? Only asking because it looks different than my roux stirring.

I know there are hundreds of ways to make it, just curious.

My roux is vegetable oil and flour. When it gets to the dark brown I want I add my trinity and two bay leaves. The pic is after the trinity and bay leaves were added and finished on low flame for about 30 minutes.

Thank You Rayzer. Very Happy It is pretty much a southern thing. Some do it others add potato salad to their bowl. We do eggs and once folks taste that egg they are usually hooked. Laughing
