I have a package of Hi Mountain jerky cure and an over abundance of ground venison. There are instructions on making jerky using ground meat then rolling or extruding it. My thought was to mix it up and stuff it into casings for a snack stick style treat. Anyone ever try using a mix like this and stuff it into snack stick casings? I'd have to add some fat to the venison which is easy.

I did try it once a couple of years ago except I put it in a casing that stuffed to 1 1/4". It was good if you like jerky but I thought it was too much of a Soy sauce flavor. It made good "beer" sausage. |

To solve the dryness and remembering you are stuffing this you add some fat to the mix. _________________ Chris Haywood
