How do you load your basket? I'm not happy with lump in basket and large chunks of wood on top. Doesn't have the same taste as my off-set. How should I be loading the basket? Should I be doing some type of layering?

I cover the bottom with lump or charcoal then add 4 or 5 chunks spaced out then more lump or charcoal then bird nest the center and add one chunk there. Once my starter coals are ready I dump them on top the chunk in the bird nest.
On a side not the drum is never going to taste the same as your offset. If you are not using a diffuser you could try one to keep the drippings out of your coals. It will be a bit closer to say a reverse flow taste. _________________ Always remember slow and steady wins the race.

In the center of your basket once it is loaded take some of the lump out of the center to create a bird nest of sort. It will allow you to place a chunk of wood in the nest and then place your lit coals on top. _________________ Always remember slow and steady wins the race.

I'm still learning to cook on my UDS but I started adding some small splits along with chunks to get better results but still not like my stick burner _________________ Lang 60

I whole heartedly bow to the master....k.a.m. but, I deadended my basket so that it burns in 1 direction...I too, mix the levels...find it keeps heat even and burns for hours untouched...just my 2, not even copper cents, worth... _________________ GreenSmoker / Steve C.
