I did a pastrami, (fauxstrami), around the end of February/first of March and found the remnants of it in the fridge this morning. The temp in the fridge is maintained around 37*, (it's primary function is as a beer fridge), so my question is, does anyone think this might still be good or should I throw it out? I don't do pastrami very often so I am not sure about it, but a grilled pastrami sammy sure sounds good right about now.

I suppose it would depend on how you had it wrapped. If you vac sealed it then you "might" be ok but otherwise I generally don't go over two weeks and that's probably pushing it. You could always give it the sniff test to see if it got funky.

Yeah, it was just wrapped in plastic. It smells ok and looks ok, but the more I think about it I am not really willing to take a chance. I guess now I have a reason and excuse to do some more.

it is a cured meat, so that affords you more time than something not cured.

if it does not have a slime on it, my guess would be that it is edible, what you need to be very aware of is a low/no oxygen environment (plain plastic wrap does not create that situation)

Does it have a slimey feel? No off odors, If so, I would venture a taste to see if the flavor is off.

But I also adhere to "If in doubt, toss it out"

More and more, my over riding question when deciding to keep or toss something like "How much did this cost?" and then "Would I pay that much to avoid a three day case of food poisoning?"

99 out of 100 times, the avoidance of food poisoning wins.
