An offsetcooker that runs on wood for the most part.
Or any cooker that uses wood splits as its dominant fuel source. _________________ Always remember slow and steady wins the race.

If your cooker is built properly as far as adequate draft then running on well seasoned wood alone is the norm. On smaller (Back yard off set cookers) having to replenish the coal base with either lit charcoal or lump is common during long cooks because of the small coal base needed to run the cooker.
Also keep in mind everyone's idea of "Enough smoke" is different. _________________ Always remember slow and steady wins the race.

My 30 gallon (16" x 36") cooker runs exactly like this.
If you don't know about this already, here's a link to a pit calculator to help you size things. http://www.feldoncentral.com/bbqcalculator.html
And here's another resource; http://planetcalc.com/search/?tag=3128 |
Great ! I run a 40gal reverse flow then I build years ago .....but when I built it I didnt know nothing about smokin and I just finish to modifed it with that calculator. My firebox was too smal .....air intake too small..... Now it suppose to be all right.
I just have to paint it and try it......
I was always runing it with charcoal because I was thinking only wood made too much smoke but I happy to ear that and I m gonna try it soon _________________ 40 gal reverse flow |
