Most cold smoke generator uses design of Venturi Pipe.
Any wood burning will creat heat and the smoke must be HOT.
The Venturi Pipe simply uses excess fresh air to suck hot smoke out. The fresh air mixes with hot smoke to get so called COLD smoke. But even so it is more often than not over 200F.
One famous manufacturer of cold smoke generator claims that its smoker can produce smoke over 200F. What a dishonest misleading. If you are proud of its HIGH temperature, why you call it COLD smoke generator.

If you want true smoke taste of salmon or cheese, you must need true and genuine COLD SMOKE.

Following Ice/Water cooler can lower smoke temperature to 40 to 50 F. After cooling, the heavy components can be condensed out as soot. The smoke looks as light blue. and the fish/cheese smoked will taste less bitter.

I Cold Smoke Cheese ALL THE TIME!

I DO NOT USE a "Venturi Pipe" Type of Cold Smoker.

My temps almost NEVER reach 70' F. ...More like 50'F - 70'F.

I use Wood Chunks to produce "TRUE and GENUINE COLD SMOKE."

IT IS OFTEN SAID, "One Picture is Worth a THOUSAND Words."

Why cooler.
The smoke consists of different components, mixture of light and heavy components.
It is the heavy components that casue taste of bitter.
Before smoke enters smoking house, the smoke is cooled, the heavy components will be condensed out.
the Purified smoke will look light blue.
I can not take a video to show it as it is really "LIGHT" blue.
This cooler is not new. tens of pieces had been sold 2 years ago. Due to high shipping cost I did not sell it in the last 2 years. Now I find an economic shipping method for it.
You can eat noncooked fresh beef fish as Japanese.
You can also eat stinking meat in survival situation as shown in Men in the Wildness.
Someone drives a second or third hand car worth of US$1000. Others drive a limousine worth of US$1M.
How to smoke fish is a very personally issue.
I never look down upon the millionaire.
and I am never proud of my poverty.
and I never think a poor man is superior than a rich man.
I am more than happy to answer all questions about smoking.

No one Here Needs to Know. If One Wants to know what time of day it might be, all one needs to do is look at the clock...
