Cooking for a wedding this afternoon. Customer wants a carnival like food truck atmosphere for the dinner!
Carnival they shall have!!
Menu is:
>to quote the bride "ridiculously huge turkey legs" - some of these bad boys must weigh 3 pounds!! 41 of them [ only need a maximum of 40 Wink - one for the cook!!]

Put in a brine yesterday noon-ish. Will smoke to about 175Β° then pan and hold until ready to begin dinner - plan is to deep fry them to order to crisp skin!! Cool Cool
rest of menu is:
>Poutine - fries with cheese curds smothered in gravy. I roasted some prime rib and beef tenderloin trimmings from a cook earlier in the week, kept the juices and added some brisket drippings that will be the base for the gravy Cool Cool
>Fresh cheese curds wet battered and deep fried
>BBQ nacho's - chips, cheese sauce and choice of brisket, pulled pork or pulled chicken..jalapeno's, onions and guacamole.
>Fries
I am freaking starving just thinking about serving this!
Yea, it may belong in a different section, but wanted to share with all of you!!
I just hope to remember to take pics of the entire meal options

MAN that looks awesome! Curious, what was your brine recipe? Ever since Disneyland I have been wanting to try my own turkey legs......

I use a basic 1/2 c Kosher salt, 1/2 c sugar [ can use brown sugar ] to 1 gallon water, then add some garlic and onion powders.
A few of these are done already.....all I can do to NOT taste test!!! Smells like Thanksgiving in my neighborhood!!!

Darn thangs were squirting at me as I checked them for temp.....Just hope it all stays in them as they are held!!

Man, that sounds like one hell of a cool bride wanting something like that. It all looks and sounds like a great feast. Kinda redneck meets upper midwest Laughing Laughing Niiiiiice! I'll have to try the frying after smoking thing the next time I do turkey legs (that's how I do my chicken wings).

The visual menu:

Fresh cheese curds, wet battered and deep fried

finished legs...OH MY were they GOOOOD!

Poutine - the gravy was made from prime rib and brisket drippin's ....aka Trippin drippin's!

Standard BBQ nacho's - we set out onion, jap's, sour cream, diced tomatoes and guac for them to apply as desired

Based on the response from all, and the giant tip

Thanks Guy's - it all went quite well!!
I was looking at the fryer oil from the legs....I used one fryer for fries and curds, the other strictly for the legs...The oil looks like old motor oil from the smoke on the legs!! [ it was brand new oil in freshly cleaned fryer yesterday a.m.....] I am looking forward to making some fries in it today for the Football afternoon!! Smokey turkey flavored fries??? Time will tell!!!

Mike, read about Disneyland smoked turkey legs on another forum. Seems to me that to acurately duplicate them, folks had to use some cure #1 in their marinade. Gives the meat a redish color and a ham like texture.
