Foil or no foil, your choice. Electric, propane, LP, charcoal or lump is your choice or what you have or what works. All choices are personal or very much practical. Water no water or whatever. Marinate or not. Get to BBQx, cook more and fuss less. Someone may do something that may be a revalation to someone somewhere else. Life is short, BBQ hard, let boring people eat from dive-thru's.

He forgot, left or right brisket, and fat up or down, defuser plate or no plate.

Must be the heat, and the humidity, I know I want to visit TX in the Spring or the Fall, not in the summer! Wink

Charcoal or lump?, brine no brine?, inject no inject?, High heat low heat? Foil or butcher paper? Maverick therm or no therm? sauce or no sauce? reverse flow or tuning plate?, upright or offset?, insulated or no insulate?.

more serious note I am still trying to figure out what the best rum is to drink while tending a cooker.

I like Appleton rums, they have a range from smooth to spicy, and aged for a nice long time.

I have 4 on hand, Appleton Estate 21 year old Jamaica Rum, Appleton Estate Rare Blend 12 year old, Appleton Estate Reserve Blend, and Appleton Estate Signature Blend.

I like them for their differences, and their similarities, but don't ask me to answer a question after I've tasted them all in the same evening!

If I'm having a long rum drink I like Captain Morgans Original Spiced rum with Coke and ice, or Captain Morgans Private Stock with just ice!
