I have some smoked cheese sitting in the fridge (been there for about a week). If I bag it up and put it in the freezer, about how long will it stay good? I'm new to the cheese smoking and really like it, but I would like to have it during the summer months as well. I appreciate any help from you folks. |

I just vac seal and put in the back ipf the fridge. I find that the longer it sits,the better it tastes. I also find that freezing cheese sometimes changes the texture of some cheeses. |

Just vac seal it - I never put mine in freezer as long as it has a good vac seal you are good to go, I have some in fridge for two yrs now. I know one person has some aged for 12yrs never in freezer. Good luck
