The question is really for those that vend in Fla.
Is it legal to pre cook food and serve it at an event. Meaning can I cook pork butts today vac. seal them and serve them on Saturday. This question has come up and I did not know the answer

Best bet, check with Mike (BBQ MAN). I do not vend but have done events for the moose lodge, fire dept. etc. under their license. I have been told that the same safe serve rules for cafeteria's apply. Fla. is famous for different rules for different areas. Hallll, as a point - legally there are three different sets of rules for keeping fish on Lake Okeechobee. Go figure... Rolling Eyes Rolling Eyes

I have not had the time to look up any info on it yet I was hoping Mike might chime in, he does once in a while.
I forgot the Okeechobee had different sets of rules, but I think that is just for bass. which I don't keep anyway

I talked to Mike last night, he was out on a vending gig - said he would reply sometime today.....Must have went on into the wee hours??!! He'll remember eventually, maybe..lol

Hey there gang.

Rules for vending are state wide, and sometime controlled at the local level. Either way you can reheat foods properly ONCE and be ok per Serve Safe guidelines. You cannot vac pack anything legally without a special permit.

Thanks Mike I was pretty sure that was the answer but the last few days I have so busy that I've hardy had time to sit down so I could not look up the info and give them the correct answer.
