Hey all,
Im getting ready to smoke 2 brisket flats and want to know if there is anything I should do differently than a whole brisket.
The flats are pretty trimmed and lean so Im not sure if I should brine them or anything first to give extra moisture
any suggestions? |

Cover with Bacon or Back fat or some Beef fat if you can get some from a butcher! _________________ Here's a change Robert.
