It's been awhile since I posted anything here. This is the first cook I did on my new home built smoker, I did this in the summer and finally got around to posting it here for you fine folks! I made bacon wrapped onion rings laced with sriracha hot sauce then wrapped in bacon (of course) sprinkled with my own rub. The ribs are my standard go to recipe. Over all the first cook was as expected and temps stayed constant over the entire cook, so I would say its a success.

Looks good to me.....I have made those onion rings as well...
they make great appetizers.

Yeah! Those onion rings are fantastic. I've made them a couple of times, once dusting with rice flour and deep frying for a minute (after smoking them). Nice looking cook.
