"Ratios" by Ruhlman. Think BBQ sauce and sauces in general. It does not have a recipe for BBQ sauce but it does go in depth in what it takes to make a sauce.

OK, OK. So it sounds too foody. It has the ratios for brine, sausages, sauces and butter. I was looking for a rule of thumb for these. This guy makes a living at being a professional chef. You want to put together something with what you have on hand or something completely unique, this can be a handy guide. There are hard and fixed rules for certain things, if you want it to succeed and not waste money. I like neither like wasting time and money.

I've got a couple of his other books and have eaten well out of them, not seen this one though, I might have to look it up.

The 2 to 1 ratio saved me this Christmans. I lost the recipe to Breakfast Pie, I knew the ingredients to everything but the eggs and milk ratio. Damned if it didn't save my rear end. 2:1 milk to eggs ratio. Weight of cream to eggs, 4 eggs to 3/4 cup of cream. Everything else was by eyeball and I have big eyes, aka, you eat it once a year, splurge!
