Every year We smoke a turkey for one of the Secretary's at my office. We usually cook it the weekend before Thanksgiving but this year Debbie and I will be competing next weekend so we cooked it this weekend instead.
The bird after resting and fixing to be de-boned.


De-boned, bagged and in the ice bath cooling for the freezer.

Man, that looks great! Beautiful color. Do you smoke the innards too for your Gumbo Turkey? I'm doing a Turkey tomorrow (was today, but somebody forgot to take it out of the freezer Shocked ) to make Gumbo.

Thank You brutus1964. Very Happy We cook turkeys between 275° and 325°. This bird on the WSM with no water in the pan took about four hours give or take.
