Well Bosses day is the usually the start of my fall gumbo cooking and this year is no exception.
Smoking a turkey today for a turkey, sausage, okra, and egg gumbo cook tomorrow. Very Happy
12.5 lb turkey with some Tony Chachere's


On the 22.5" WSM with some Mesquite and Oak.

YUM, YUM, YUMMY!! I looooves me some Gumbo in the cool weather. This is the year I finally try your version (with smoked Turkey and egg), probably next week if I can find a good deal on a bird. But we have to finish this gigantic pot of split pea soup first Laughing

Made the roux.




Added the Trinity Man oh Man that smells good. Very Happy


Finished roux.


After simmering I added the eggs.


After the eggs started getting Happy it was time to smother the okra.


The okra is smothered when it takes on a olive drab color.


5 gallons of Goodness. Very Happy
