Never been much for coleslaw but decided to make it for the first time today, with Roxy's recipe. Just had a quick question. After refrigerating for a few hours it is pretty liquidy, likely from the cabbage losing water. Should I mix up real well before serving, then drain the excess moisture? Or just mix it and leave it?

I just mix it in and serve it, I find if you remove the liquid it sometimes becomes too dry!

Some folks will sweat their cabbage before making it into slaw. Use copious amount of salt on the shredded cabbage and let it sit for a few hours, drain, rinse, dry, then add your ingredients.

With all that being said I tried doing that the last time I made slaw. It was a royal PITA and it made a hell-of-a-mess. Laughing I told myself that was going to be the last time I ever did that, but at our cookout I had someone tell me that they were real picky about their slaw and they thought mine was top notch. Confused So, I don't know what to tell ya. Wink Yeah, unless the liquid is real runny I'd mix it up like SoEzzy says.
