| Made some Italian beef juice / gravy and left it to cool before refridgeing it. Went on to other things and forgot to put it in fridge 5 hrs later. No actual animal matter was used except canned beef broth. So.... how long can it be safe when only broth was used and spices? |

For own use I'd be fairly good with that if you are going to use it tomorrow, but if you are serving others, the young or the elderly, I'd probably turf it and redo a new batch for serving them.

Thanks guys. I got 2 toss it's from here, one use it now or toss it from another source, and one it will be fine. it got tossed. What a shame. Guess I will try again this weekend. Glad I didn't smoke the roast yet. FWIW...it was my own ma that gave the it will be fine response, she was a bit offended she got overridden. |

I would have brought it back up to a boil as a precaution, but I think it would have been fine even if you hadn't. I make a lot of stocks with my scraps and trimmings and leave them in the pot on the stove to cool regularly for that amount of time without any issues.
Fortunately, my family loves soups! Makes it even more economical. |

Yeah, you would have been fine. Should have listened to your mama . I make Minestra in the winter, and the pot sits on the stove for days, although it does get temped every day. _________________ The Matt Ryan of LIARS! (#2)
