I have been browsing this site for ideas and hints for a long time. This is a great community and I decided to move in. I have been smoking for years and am in the process of building my first offset. Just completed and cooked on my first UDS from SoEzzys sticky. Man that thing is great. 15 hours on 6 or 7 pounds of charcoal.

Thanks SoEzzy. I have learned so much from you and K.A.M and all the other people on here. I cooked some chicken quarters to season the smoker. After the smoker sitting at about 280 for 10 hours a buddy called and came over with ribs and brats for me to cook for him. First time I cooked ribs fast but they turned out great. Thanks for the cooker idea. I have 3 gas smokers, a cheap brinkman offset and another vertical and can tell you they are retired as of now. Sorry no pics. (I don't want the dreaded resize reply. Haha.

Thanks Smokin Mike. Thanks TrailerBuilder, I live in Ward, we are about 25 miles north of Little Rock. I also build my own trailers. So do not be surprised if you get hit up for some advice. Although I do not have access to the materials for cutting blocks. That thing was sweet.
