I have a foreman that is Greek....his family owns a small olive orchard in Kalamata....each year
the ship some first press olive oil back to Canada in 22 litre tin pails.....this oil is beautiful and has not been messed with at all.
I was lucky enough to get on the list and get a pail...which I share with family.
I dried some fresh rosemary and some Ghost and Scorpion pods in the dehydrator to make for some tasty hot oil.
Dried to make sure all the moisture is removed from anything you add to the oil....once dried i find some fancy bottles...
add the pods and rosemary,fill with oil and store in a cool dark place for about 3 weeks......longer the better it gets.
It is now starting to warm up nicely....ready to drizzle on pasta,salads or anything you want to kick up a notch.
